Just as the title states, I have fallen in love with living a healthy lifestyle. It’s incredible how good I feel knowing that I am nourishing my body with healthy home cooked meals everyday that I pour my heart and soul into.This week’s menu was nothing short of amazing—every dish was a hit! From the slow cooker fajitas to the sweet potato power bowl, the cauliflower fried rice, and of course, my famous chili—each meal truly impressed.
I am excited to plan next week’s menu because we are going to be hosting bingo (we play every Thursday as a family) and we decided on pasta with a meat sauce. I’m going to get creative and make a yummy bolognaise sauce in the slow cooker. Looking forward to it. With a healthy garlic toast and a fresh salad! John and I love hosting so much.
Another win for the week was that I worked out four days in a row! I did two YouTube videos and then I went to a new gym twice. Well I have been to this gym years ago, but it was my first time going back. I even asked for orientation on two of their leg machines because they were super big and scary, and I didn’t want to hurt myself. Fortunately they had a staff member show me how to use them, and I was so happy she did! I got such a good work out in! My legs were so sore after!
It felt amazing to be back at the rec centre (instead of Club16) because that is where a pool is in which I need for my shoulder rehab. Hopefully soon I’ll be getting treatment on my shoulder and then I can start therapy. For now, I’m working my lower body, abs and cardio! Plenty of things to do at the gym that do not involve my shoulder.
My WW coach this morning asked a question “how do you guys feel about May?” And I shared honestly that I am super proud of myself this month. I have had such a rocky road with having a mental health crisis, being admitted to the facility, losing control of my food pillar for two weeks, and then coming home and getting straight back on the WW bandwagon again. It’s been a roller coaster. But the thing I continued to do even when I felt like an imposter and I was gaining weight…I still showed up to workshops. I still was in a meeting every single day. I still shared my stories to fellow members across Canada.
I still worked on the other three pillars of Weight Watchers (sleep, activity, mindset) and held on as hard as I could. I’m still struggling with my mental health and haven’t seen my baseline in a long time but that’s okay! I’m well medicated after my admission to CRESST and have a solid plan with my psychiatric team to help with any spirals or challenges I might face in the future. I am able to drive again and I can finally help with cleaning around the house! I feel for John when I was sick because he was cleaning up after me all the time because my function was so low. Finally, I can unload a dishwasher and do my own laundry etc. I am so proud of how far I have come. Still a ways to go due to consistent stressors regarding my shoulder injury…but progress is progress!

This week on my YouTube channel, I tried something totally new—and I’m still blown away by how delicious it turned out! I made Cauliflower Fried Rice for the very first time, and let me just say… wow. I wasn’t expecting to fall in love with this dish, but from the first bite, I was hooked!
The flavour profile was unreal—a perfect balance of heat, savoury notes, and that classic takeout-style richness, but without the heaviness. The sauce I whipped up for this recipe was absolutely to die for—rich, tangy, spicy, and full of umami goodness that took the whole dish to the next level.
It was also my first time cooking with cauliflower rice, and I couldn’t believe how beautifully it turned out. Light, fluffy, and the perfect canvas for all the vibrant veggies I tossed in. It soaked up the sauce just right, giving each bite so much depth and texture.
Oh, and here’s the best part: this recipe ended up being only three points per serving on Weight Watchers. Yes, you read that right—three points! It’s guilt-free comfort food that totally satisfies those takeout cravings.
And get this—John even said it was “better than Chinese food”. Coming from him, that is the ultimate compliment.
