Staying accountable when no one is looking

48.4 pounds gone

I had a small gain on the scale this week (0.4 pounds). I think it was from All You Can Eat Sushi one day (we celebrated Father’s Day early)…that was not a successful day on the program. I just can’t control myself around sushi! I also had a lot of pasta this week, too, which makes things harder. I just really wanted to film my pasta sauce recipe and share it with everyone, because it was so good the week prior, but then we had leftovers for days! Not that I’m complaining, I love pasta…it’s just a hefty dinner to have multiple days in a row. The scale did not agree with me!

John is going out of town this weekend so I am going to be alone for 4 days. That is always the biggest challenge for my WW program is eating alone. Sometimes I don’t feel like cooking a big fancy dinner when it’s just me. When no one is watching me I can make poor choices. But not this weekend! I want a loss on the scale next week so I am going to work extra hard. I made a bean salad and a chicken salad to help me stay on track and both turned out fantastic! I couldn’t believe how delicious they were. The bean salad was Greta Podleski, and the chicken salad was my own recipe. They will both be on my channel soon.

Thankfully, my mental health has come such a long way. This time, with John going away, I feel strong, steady, and confident — there’s no fear of spiraling or needing to be hospitalized like before. I still remember the last time he had to be away for five days; back then, everything felt too heavy to carry alone, and I ended up being admitted to a mental health facility for two weeks to get the help I desperately needed. It wasn’t just his absence — I was surrounded by so many triggers and so much unprocessed stress that I simply couldn’t hold myself together anymore.

But looking back now, I see how far I’ve climbed out of that dark place. Most of those old stressors have faded or been resolved, and I’ve worked hard to build healthier coping tools and a stronger mindset. It hasn’t always been easy, but every step has been worth it. Today, I feel hopeful, resilient, and proud of the progress I’ve made. It reminds me that healing is real and that it is possible to find peace again, even after the hardest chapters.

I am so grateful for my new medication regimen and how grounded I feel. I haven’t felt stable in a long time and it feels different. I feel a little sedated from all the medications, but that’s okay! It’s better than being out of control. I’m excited to have found stability right before we go away on a big camping trip with all our friends. It’s going to be great!

Let’s talk about this incredible chicken stew I’ve been loving lately — honestly, I think I’ve finally perfected it. It’s one of those recipes that never fails to impress, no matter how many times I make it. Every spoonful is rich with flavour and brimming with wholesome, nourishing ingredients that make you feel good from the inside out.

And the best part? It’s completely zero points! It’s a hearty, satisfying stew that fits perfectly into your healthy eating plan without costing you a single point.

I especially love making this on days when I don’t want to turn on the oven and heat up the whole house. I can just toss everything into the slow cooker earlier in the day and by dinnertime, I’ve got a warm, comforting, all-in-one meal ready to serve. It’s the ultimate fuss-free dinner that checks all the boxes: healthy, filling, and absolutely delicious.

If you’re craving something cozy, nutritious, and so easy to make, this chicken stew is sure to become a new favourite in your kitchen too. Trust me — once you try it, you’ll be adding it to your meal rotation again and again!

Until next time.

P.S. There will be no blog post June 22nd as we are away camping.
