Video/blogging is keeping me accountable

48.8 pounds gone

Blogging and recording content have truly become my passion projects—they bring me so much joy every single day. Sharing my love for food and teaching others how to cook different recipes gives me a deep sense of purpose. In fact, diving into social media completely transformed my life. This past fall and winter, I found myself in a bit of a funk, but showing up online pulled me out of it and gave me a fresh, positive perspective.

I’ve never felt so clear about what I want. Social media has become my creative outlet, a space where I feel fulfilled and inspired. It’s given me a sense of accomplishment and drive that I didn’t know I was missing. Being accountable to my online community has brought out a strength and perseverance in me that I’m incredibly proud of. It’s helped me reflect on my mind, body, and soul in ways I never expected.

Opening up about my weight loss journey on Weight Watchers has been one of the most honest and empowering experiences of my life. The best part? I’m staying accountable to my goals, hitting major milestones, and shedding the weight that I’ve carried for far too long. Even better—I’m truly enjoying the journey. Every step I take toward a healthier lifestyle brings me joy, and that happiness is something I now feel every single day.

I also love helping people. That’s why I’m a nurse. That’s why I started this blog. That’s how I uploaded my first video to TikTok all those months ago. And that’s how my YouTube channel was born. I love teaching people and helping people with their own journeys. For example, I had a lady reach out on TikTok for any tips about weight loss. How cool is that? I messaged her and we had a beautiful conversation about her starting WW and how excited she was. I’m so grateful for that platform to be able to have those types of connections. I even started following several other weight loss accounts and see other people progressing on their journeys and we comment and support each other. The sense of community on social media is really special.

I was in a Weight Watchers workshop and Coach Carissa asked at the beginning of the workshop (before it officially started) if anyone has a creative outlet. I immediately raised my hand and mentioned my blog and social media and she was so impressed! We now follow each other on the different platforms and it was a really special connection. I love her workshops, she is an incredible coach (@coachcar_ is her instagram and TikTok handle if anyone is interested!) She is so calm and comforting, I always feel so relaxed after her workshops.

I also went to an evening workshop for the first time in a while, there was one at 730pm on Monday night with Coach Tony and I was incredibly impressed. He was so enthusiastic and wonderful towards all the shares in the workshop. I am definitely going to make that workshop a priority moving forward! I put it in my calendar! Typically I only do workshops in the morning, but there was something special about Monday night that I am going to join more often.

One thing I am proud of this week is a pasta sauce I made. I am going to have to upload it to my channel at some point because it was really, really good. We hosted Bingo on Thursday (every week we play as a family, it’s tradition) and this week it was at our house and oh boy did I go all out for the food. I cooked this pasta sauce on low for 10 hours in the slow cooker and it just blew my mother in law away. Not going to lie, she is a little particular when it comes to food and when she taste tested the sauce my heart was pounding! I was so nervous she wasn’t going to like it. But after she tasted it she said she loved it so much she asked for the recipe! What a win! At dinner she even said “I hold a little resentment because the sauce is better than mine”! What a compliment. John and I absolutely love hosting dinners and look forward to it whenever we can. I think I’m going to have to host Bingo more often just so I can get creative in the kitchen. So fun!

Let’s talk about this week’s recipe—these overnight oats were absolutely next level! Every time I finished a serving, I genuinely felt a little sad it was over. That’s how good they were. I found myself looking forward to breakfast every single day, which is so fun!

They’re the perfect make-ahead meal for Meal Prep Sunday and such a game-changer for getting organized for the week. I usually prep six jars so John and I are set for three full mornings. It’s one of those small habits that sets us up for success and keeps our mornings smooth.

And now that it’s strawberry season? You have to use fresh berries. They take this already delicious recipe to the next level—don’t even think about skipping them! The protein powder and mason jars I use for this recipe are on Amazon.
